Happy Good Friday All! Easter is right around the corner and I have planned a Vegetarian Easter menu that will satisfy all of your guests! They won’t even miss that ham since they will be too busy devouring these incredible vegetarian dishes. I chose a collection of recipes that pair well together but are also very hearty and of course tasty. I cannot wait to share this amazing food with my family this year!
I have so many favorite recipes that I have made over this past year but these are all definitely at the top of my list and are all recipes I make regularly. The newest recipe on my menu this year is the Incredible Portobello Mushroom Parmesan which my family actually requested that I make. I am slowly converting them to my vegetarian ways. My plan is working. HA, HA.
Next up is my Piled High Brussel Sprout Salad! OMG! This salad is so delicious and tangy with that amazing crunch from the Brussel sprouts and a hint of sweetness from the pomegranate seeds. You have to make this!
Then of course I have to make my Super Healthy Lentil Soup. It is a winner every time I make it and is a crowd pleaser for sure. It’s also so easy and is something I can make while running around after my kiddos.
Finally, my amazing Roasted Red Pepper Deviled Eggs that my kids went crazy for and that color OMG! Another super fun and easy recipe you can make in no time at all.
Last but certainly not least is dessert. Of course as many of you know I am not the best baker but I am working on it. I chose to make my Three Ingredient Berry Empanadas since they take only a few minutes and my kids can help make them with me. They are also incredibly delicious and a winner at every party! I just LOVE these so much!
