Simple Healthy Zucchini Pizza Boats

Description

Zucchini Pizza Boats come together in under 30 minutes and are literally the most delicious low carb pizza recipe. They are loaded with marinara sauce, melty cheese, homemade pizza seasoning and topped with mini pepperoni. It’s a great way to enjoy pizza with less carbs and more veggies. Gluten free and kid-friendly!


Ingredients

  • 3 small zucchini
  • 1 tablespoon olive oil
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 1 cup marinara sauce
  • 1/4 cup shredded parmesan cheese
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1 cup shredded cheese – I used a combo of mozzarella and cheddar cheese
  • 1/2 cup sliced mini pepperoni
  • Dried parsley – optional for topping
  • Red pepper flakes – optional for topping

Instructions

  1. Prep the oven. Place a rack in the center of your oven and preheat the oven to 375 degrees F.  Line a rimmed baking sheet with parchment paper or spray a 9×13 baking dish with cooking spray and set aside. 
  2. Prep the zucchini. Slice each zucchini in half lengthwise and use a spoon or melon baller to scoop out the center (seeds and pulp) of each half of zucchini, leaving about a 1/4 inch border around each one. You can save the scooped out zucchini for another recipe or discard it. Place the zucchini boats onto a lined baking sheet. Drizzle the zucchini with olive oil and a sprinkle of salt and pepper.
  3. Assemble the Zucchini pizza boats. Mix up the parmesan cheese, Italian seasoning and garlic powder in a small bowl (this is the pizza seasoning). Add a spoonful of the sauce into each zucchini boat, spreading it out in a single even layer. Sprinkle some of the pizza seasoning over the sauce, top each with some shredded cheese and sliced mini pepperoni.
  4. Bake. Preheat the oven to 375 degrees F and bake the Zucchini pizza boats for 15-20  minutes until the zucchini is nice and tender and the cheese is all melted.
  5. Serve. Remove the pizza from the oven, top with more pizza seasoning, some dried parsley and a pinch of red pepper flakes. Serve immediately and enjoy!

Notes

  • Use smaller zucchini for this recipe. If the zucchini are too large then they will take longer to cook and will be more difficult to pick up and eat.
  • You can easily mix up the toppings in this recipe. See topping suggestions in this post above. Tip: If you are using veggies that contain a lot of water like spinach or tomatoes then make sure to sauté them first before adding them to the pizza.
  • You can store these Zucchini pizza boats easily by letting them cool completely and keeping them in an airtight container in the refrigerator for up to 3 days. Reheat them in the microwave or the oven on a baking sheet at 350 degrees F for 8-10 minutes. 
  • To cook theses in the air fryer, preheat the air Fryer to 350 degrees F and spray the air fryer basket with olive oil spray. Place the assembled zucchini pizza boats into the air fryer basket in an even layer (you may need to do this in batches). Close the basket and cook for 8-10 minutes at 350 degrees F. Remove, let cool and enjoy!
