Here we are, a week from Thanksgiving. Wow! That sure came up fast! I feel like summer was yesterday and now it’s full on fall weather, pumpkin everything and the holiday season just around the corner. I was feeling very unprepared so I decided to get myself in gear and design my Meatless Thanksgiving Menu a week early. I am so on top of things lately, ha ha.
I am hosting again this year and we tend to have a mix of meat eaters and non-meat eaters so of course I assigned myself the meatless dishes since that is my specialty. I wanted to make sure that those of us not eating turkey had some main dishes to enjoy rather than just getting stuck eating the sides as our main course. Last year I made my Mushroom Wellington and let me tell you, it was the hit of the party so I better make it again or my family will have my head! I also made my Piled High Brussel Sprout Salad, so making that again as well.
To keep things interesting and mix it up a little, I decided to add in a couple of fun appetizers to the menu that I think are fairly creative and pair great with red or white wine, which everyone seems to enjoy this time of year.
So without further ado, here is my Meatless Thanksgiving Menu.
Butternut Squash Veggie Balls will be a perfect hearty appetizer. Plus my kids love them so yay!!! These are crispy on the outside, soft on the inside and are perfect for dipping into my special yummy tomato sauce.
My second favorite appetizer recipe would have to be the Spinach and Goat Cheese Stuffed Mini Peppers. Perfect little handheld pockets of sweet peppers stuffed with a tangy creamy spinach and artichoke filling. Yum! I love to make these and everyone seems to enjoy them so I am hoping they are a hit.
For the salad, It’s my Piled High Brussel Sprout Salad which I am making again because I made it for both Thanksgiving and Christmas last year and I am betting my family is expecting it. Why reinvent the wheel right? If it works, it works! Crunchy Brussel sprouts shaved thinly and mixed with strips of kale, pomegranates seeds and a tangy sweet lemon shallot dressing your guests will go crazy for!
For the main course, I will be making my Mushroom Wellington which is hearty, so flavorful and was gone in minutes last year and I made two! I LOVE this recipe and I will likely be making it again this season for sure. It’s so good!
Then of course my beloved Skinny Mushroom and Spinach Lasagna must make an appearance. I know you are thinking that I am making a lot but I LOVE food and I want there to be a lot of meat-free options. Plus I can make this lasagna the day before and just bake it on Thanksgiving. Love a make ahead meal! Although it’s not traditional for Thanksgiving, it is a very hearty dish that everyone can enjoy!
For dessert it’s my Gluten Free Macaroons that I know my dad will be happy about since it’s one of his favorites. These cookies are so easy and my kids can help me make them which is a bonus since my 5-year-old will be off from school most of the week next week. He loves cooking with me and he is actually getting quite good at helping me in the kitchen, my little sous chef.
I made these cookies for the Super Bowl this year and they were gone in minutes. I had tested this recipe out so many times before I got it just right so I was very happy my family and friends were so into them. A perfect lightly crispy outside with the gooey center that you expect from a macaroon, dipped and drizzled with melted dark chocolate. These are amazing!
Just looking at the picture makes me want one!
So there you have it. My Meatless Thanksgiving Menu that your whole family will love! Trust me! When I make dishes like these they are the first to be eaten all the time. I have even been known to turn the most skeptical meat and potatoes, non-veggie lover into having a crush on mushrooms and Brussel sprouts.
