As I have discussed in previous posts, baking is not my thing but I am working on getting better at it. Cooking is much more within my comfort zone and skill set but I do believe that if you are passionate and practice enough at something then you can get good at it, so I am going with that thought and continuing to plug along in my baking training. So here is one of my favorite desserts and of course it requires zero baking (baby steps) but is a good start for me since it does involve planning and measuring which are baking essentials in almost every recipe.
These little cuties took me no time at all, did require a little patience but were well worth it! You really cannot go wrong with a peanut butter cup since the combo is classic and loved by most. There are only three ingredients and probably ones that you have in your pantry right now! Chocolate chips, peanut butter and almond milk. Very easy and fun to assemble, this is where the patience came in since you need to spoon in the chocolate and then the peanut butter and then the chocolate again to top it off and it can get a little tiresome if you are making a lot. I assume this would be a good thing to get the kids to help with but mine are too little so it was all on me this time.
I also cannot pass up a bite sized dessert since they allow you to eat a small portion but still enjoy the glorious indulgence of the chocolate and peanut butter goodness. Plus, I can use these for entertaining which is a huge bonus since I entertain a lot and I like to have a lot of go to recipes that I know well so I can whip them up quickly and stress free.
More time to I enjoy the party and the wine, a post for another day, but good wine is a staple anytime I am entertaining even if it is just a girls night with my mom and sister. I always try to make it special offering different wines to taste along with good food and good company which sounds like the perfect party to me!
Once they are assembled, it is in the freezer for these little guys for about an hour or two and then time to taste test. My fav!

- 1 16oz package dark chocolate chips
- 1 cup peanut butter
- 2 tablespoons almond milk
- Place the echolocate chips and the almond milk in a glass bowl and microwave in 30 second increments stirring each time until the chocolate chips are fully melted.
- Fill a mini muffin tin with cupcake liners
- Drop a spoonful of chocolate into each
- Drop a spoonful of peanut butter into each onto of the chocolate and repeat with more chocolate onto of each until they are all filled to the top.
- Place them in the freezer for one to two hours and enjoy!
