Surprise! Delicious vegan ice cream that you can feel good about eating and giving to your kids! I know! It’s like all of your dreams have come true! Every time I make this, I am always still so amazed that it is dairy free and made from only a few ingredients. Frozen bananas being the main ingredient and a wonder all on their own. You can make many different flavors of this nice cream but I of course went with this chocolate and peanut butter version. I will do whatever it takes to get healthy foods into my munchkins. Even in the form of this sweet treat.
Now onto the making of this delicious amazing desert!
Freezing the Bananas
First you want to make sure your bananas are ripe – you know, yellow and brown.
Then you want to peel the bananas (you don’t want to skip this step or you will regret it later).
Then slice the bananas into chunks.
Add them to a freezer bag. I typically freeze up to four bananas in one bag. Freeze for at least 24 hours. Freezing time varies but I find that 24 hours results in the best ice cream consistency.
When you are ready to make the nice cream, remove the bananas from the freezer and gather the rest of your ingredients and whatever vessel you plan to serve the nice cream in.
Then it is time for the magic trick! Ha ha! I must first note that I find that one banana yields about two servings of nice cream and it is a pretty hefty serving but it depends on the size of the bananas and how much you want. For this recipe I used 3 medium size bananas and it yielded 3 cups. When making this for my kids I only use one banana since they typically will share one bowl of it. Now onto the fun part. I love science experiments!
Open the freezer bag with the bananas and place three bananas into a blender ( I used my Vitamix but I have used a regular blender in the past and it worked fine).
Add in 1/4 cup of chocolate chips and 2 tablespoons of peanut butter.
Then add in the almond / coconut milk.
Then the rich and chocolate cocoa powder.
Now blend into a magic nice cream. It will come together before your eyes and you will be in amazement!
I know, I know. You’re thinking, why haven’t I tried this before?
Now, let’s put it all together
You can determine how you want to serve it or just eat it out of the blender since it may not make it to the bowl. It’s that good!
I served it two ways:
In ice ream bowls, topped with more chocolate chip and rainbow sprinkles. You know, for the kiddos. Then a heaping beautiful milkshake in a mason jar for the hubby!
Look at that. I am just amazed!
Ready to be devoured.
Please try this out. I am very confident you will love it and will now always have frozen bananas in your freezer.
- 3 frozen sliced bananas
- 2 tablespoons peanut butter
- 1 tablespoon cocoa powder
- 1/4 cup chocolate chips
- 3/4 cup almond / coconut milk
- Place frozen bananas into a blender with the rest of the ingredients. Give them a gentle stir and pulse on medium until they turn into the consistency of ice cream.
- Scoop into ice cream bowls. Top with your favorite toppings and enjoy!
- I like to eat this right after I make it since I have not had success with freezing it after it has been blended. I have placed leftovers in the refrigerator and used them in a smoothie the next day and that worked out well.
