Here it is! An amazing, satisfying Black Bean Veggie Burrito! Super healthy and great fuel to keeping you moving all day long. Also, so easy to pull together! Loaded with so many nutrients coupled with great taste that will have you making this all of the time.
As I have mentioned in previous posts, my husband is an ultra marathoner and is always in need of filling, satisfying food. He eats a lot! You would never know it looking at him since I am sure his body fat percentage is around 4%. He is a pretty incredible athlete and at his fittest at age 44. Motivation anyone? He refuses to do a race if he does not believe he can win. Competitive with himself really. He obviously can dedicate the time required to train because of his amazing wife of course! Plus I make him the most delicious food that fuels his body and keeps him going. Especially on mornings where he runs 20+ miles before work and then another 10 miles after work. Just amazing! I also run and sometimes get 10 miles in at the beginning or end of a work day but nothing like what my husband can do, running in the mountains in the dark of early morning or night.
Because of all the running, burritos are a staple in our house for sure. I always, and I mean always have the fixings for burritos in my fridge at all times. This makes my life much easier since I constantly get burrito requests from my husband. I have several versions of this recipe that I use so he doesn’t get bored with it but this is my staple version. He also has started to reduce his meat and fish intake in his diet (cu the trumpets! YAY!) And in just a few months of making that change he is running like a machine. The amount of energy we both have can certainly be attributed to our diet and we need it with our crazy schedules and two little boys. Plus, we feel like we are eating the most delicious food we have ever had and eating a wider variety of dishes so we don’t get bored with our meals. Hence the reason I started this food blog to share all of my amazing recipes with you all!
As you can see, once again, not only a recipe that is delicious but it is very pretty with all the beautiful colors from the veggies. Eating the rainbow! Packed with so much protein, good carbs, fiber and vitamins this is a gold star recipe that you can make in no time at all, as long as you plan ahead. When it comes to my meal-prep Sundays, I have some main ingredients I make that I know will be used during the week and save me a tone of time. My key prep ingredients are: Beans (drain, rinse, store in an airtight container in the fridge), make a grain (I prefer quinoa or brown rice or both), chop veggies (I always do onions, peppers, carrots and cucumbers), make my Pinch me Good Hummus, make my Presto Pesto and my homemade red sauce. I will also usually make a big batch of pasta for the kids and ensure I have pizza dough so I have quick dinners for them as well. If I have time, I do try to grate my own mozzarella and parmesan cheese since it is better to grate it yourself rather than by the pre-grated versions. In this recipe I used feta cheese that I crumbled myself. For the wraps I like “Joseph’s” or sturdy collard greens ( I love, love, love collard greens!).
Isn’t this burrito gorgeous? It makes me want to sing and dance! Please try this out and you can pair it with my perfectly roasted potatoes or spiced potatoes wedges, both so good! Add a cold beer or glass of your favorite wine and it works as an easy dinner for two (just double the recipe). Enjoy!
- 1 Joseph's wrap (you can sub collard greens if you are watching your carb intake)
- 2 tablespoons Pinch me Good Hummus!
- 1/4 cup black beans
- 1/4 cup cooked quinoa
- 1 tablespoon chopped red onion
- 1 tablespoon chopped cucmber
- 1 tablespoon chopped cherry tomatoes
- 1 tablespoon diced avocado
- 1 tablespoon crumbled feta cheese
- Salt and pepper to taste
- Lay out wrap on a flat surface
- Spread the hummus in the middle of the wrap
- Pile on the quinoa, beans and veggies and top with the feta cheese
- Fold the sides over and wrap into a burrito, take a big bite and enjoy!
