This quick and easy air fryer chicken sausage and veggies recipe is the perfect lazy day meal you can have on the table in minutes. It is loaded with protein and colorful vegetables and you can make it in 10 minutes! Enjoy it as a healthy dinner or lunch any day of the week!

Air Fryer chicken sausage rounds in a bowl with roasted veggies and cauliflower rice with a pepper mill and bowl of chopped herbs behind it.

We always have veggies and chicken sausage on hand for days when I am too tired to cook. This air fryer chicken sausage and veggies is the go-to quick meal that I make at least once a week. It’s a good amount of food that you can also enjoy for lunch or dinner the next day.

Don’t worry if you don’t have an air fryer yet, you can make this sheet pan sausage and veggies. Which is similar to this recipe and so good!

My other go-to easy meals are this air fryer roasted chicken and vegetable recipe or air fryer chicken and potatoes that I make for my meal prep all the time.

Add a drizzle of some romesco sauce or homemade pesto sauce on top to make it look a little fancy and extra delicious. You can also pair it with some fluffy cauliflower rice for a hearty protein + veggie-packed meal.

Round white bowl filled with crispy chicken sausage, veggies and rice topped with an orange sauce a bowl of sauce in front of to and a bowl of parsley and a pepper mill behind it.

Why cook chicken sausage in the air fryer?

I have cooked chicken sausage a few different ways. In the oven, on the stovetop, and in the air fryer. HANDS DOWN the air fryer yielded the best results. The chicken sausage comes out perfectly crispy around the edges and juicy and tasty without drying out at all.

Plus it makes for easier cleanup and you can cook some veggies easily along with it at the same time in 10 minutes!

It is much faster than it takes in the oven and it comes out perfectly every single time!

What vegetables cook best in the air fryer?

You can cook almost any vegetable in the air fryer. I like to use bell peppers, onion and zucchini when cooking veggies with meat since the cooking times are similar.

But you could also use, carrots, mushrooms, or green beans as well. Any quick-cooking veggies work well in the air fryer.

Ingredients needed to make air fryer chicken sausage and veggies

Bowl of red bell peppers with a bowl of chopped zucchini, bowl of sausage, bowl of red onion, avocado oil and spices in front of it.
    • Bell peppers – I used a combination of red and orange for color but any combination will work.
    • Zucchini – My favorite go-to veggie. I used about 1 medium zucchini. You could also use yellow squash.
    • Red onion – You could also use yellow or white onion in this recipe.
    • Chicken sausage – I used robust Italian chicken sausage that is nitrate and sugar-free. I found that the precooked sausage worked best in this recipe.
    • Avocado oil – you could also use extra virgin olive oil.
    • Spices – I used a combination of garlic, onion, Italian seasoning, and salt and pepper but you can use any blend you like.

    Expert Tips

    • Buy good quality chicken sausage like Applegate Farms. See recommendations below.
    • Make sure to cut the veggies and sausage into the same size pieces for even cooking.
    • Toss the veggies and chicken sausage in the air fryer basket halfway through cooking to ensure they get nice and crispy on all sides.
    • Season the veggies well before cooking for the best flavor.
    • You can omit the oil and just spray the veggies with olive oil spray to reduce the calories in this recipe although, it only requires 1 tablespoon of oil for 4-6 servings so it is still a very small amount.

    Make ahead

To make this recipe ahead you can chop and season the veggies and sausage and keep them in an airtight container in the refrigerator for up to one day. When you are ready to cook it, just give it a stir and pop it into the air fryer as directed in the recipe.

White bowl with crispy sausage pieces and rose peppers and zucchini next to a pile of riced cauliflower with a bowl of orange sauce in front of it and a bowl of parsley behind it.

    Serving Suggestions

I love to serve this chicken sausage and veggies meal with a drizzle of sauce like Romesco sauce, green goddess dressing, creamy cilantro lime dressing, or pesto. It would also be great with this parmesan cheese blend.

You can also pair it with a potato-based side like these loaded baked potatoes, crispy smashed potatoes, or over these mashed sweet potatoes.

    Storing and reheating tips

    • To store: You can store cooked chicken sausage and veggies in an airtight container in the refrigerator for up to 4 days.
    • To reheat: Easily reheat in portions in the microwave or in the air fryer at 350 degrees F until warmed through.

What is the best chicken sausage to use in this recipe?

I like to use chicken sausage that is lower in fat, gluten-free, sugar-free, and organic if I can find it. Here are a few brands that I love to use.

I find that these brands are all affordable, healthy, and delicious!

    • Applegate Farms
    • Billinski’s
    • Trader Joe’s
    • Greenwise
    • Whole Foods Market

Can I make this air fryer chicken sausage recipe in the oven?

Yes, you can absolutely make this in the oven. To make it in the oven, place the seasoned veggies and sausage onto a parchment paper-lined baking sheet and roast in the oven at 425 degrees for 20 minutes.

    Description

This quick and easy air fryer chicken sausage and veggies recipe is the perfect lazy day meal you can have on the table in minutes. It is loaded with protein and colorful vegetables and you can make it in 10 minutes! Enjoy it as a healthy lunch or dinner any day of the week! Gluten free, paleo, whole30.

    Ingredients

    Scale
    • 1 large red bell pepper – cut into 1-inch pieces
    • 1 large orange bell pepper – cut into 1-inch pieces
    • 1 red onion – peeled and cut into 1-inch pieces
    • 1 medium zucchini – cut into 1-inch pieces
    • 1 tablespoon avocado oil
    • 1 teaspoon garlic powder
    • 1 teaspoon onion powder
    • 1 teaspoon Italian seasoning
    • ½ teaspoon kosher salt
    • pinch of black pepper
    • 1 package chicken sausage (12 oz) – I used a robust Italian flavor

    Instructions

    1. Chop the veggies and add them to a large bowl.  Drizzle them with olive oil and toss to coat them all.  In a smaller bowl, mix the spices together with the salt and pepper and add the spice blend to the veggies.  Toss them in the spices to get them all nice and coated.
    2. Slice the sausage into ¾ inch rounds and add it to the bowl with the veggies and toss everything together.
    3. Preheat the air fryer, if needed to 390 degrees F and spray the air fryer basket with cooking spray.  Add the veggies and sausage to the air fryer basket in an even layer and close and cook them for 10 minutes, flipping them in the basket halfway through the cooking time.  You may need to do this in batches depending on the size of your air fryer.
    4. Once the chicken sausage and veggies are done cooking, remove them from the air fryer and serve as is or with cooked cauliflower rice or brown rice.

    • Toss everything in the air fryer basket at least once during the cooking time to ensure it all gets nice and golden and crispy.
    • You can store this chicken sausage and veggies in an airtight container in the refrigerator for up to 4 days. Easily reheat in the air fryer at 350 degrees F for a few minutes.

Hi Courtney, you can cook it on a sheet pan in the oven at 375 degrees F until the chicken reaches 165°F, probably 17-20 minutes.

Made this tonight in the air fryer with green Chile chicken sausage. I followed the recipe, but added sliced mushrooms. Served with white rice and tricolor rotini, and drizzled roasted vegetable pesto on it. Everyone loved it. Thanks for the inspiration.

Hi Jan, It’s actually cauliflower rice that I plated it with and no that is not included in the nutritional information. I hope you enjoy it!

With the Applegate Chicken Sausage and other ingredients, if the meal is divided into 6 servings then it equals 152 calories per serving.

Can you store it for 3 days or 4 days in the fridge in an airtight container? The top of the article says 4 days but the bottom says 3 days. Just need to know how long this will last.
