Simple Air Fryer Salmon Patties – With Fennel Slaw

Description

Simple Air Fryer Salmon Patties are made in 10 minutes thanks to the air fryer. Perfectly crispy on the outside and juicy and flavorful on the inside. Make them with fresh or canned salmon for a light and delicious lunch or dinner

For the salmon patties

  • 12 oz fresh salmon – see notes on using canned salmon
  • 1 large egg
  • 1/3 cup breadcrumbs – you can use gluten free breadcrumbs 
  • 2 tablespoons mayo – I used primal kitchen avocado mayo
  • 1 tablespoon dijon mustard
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh chopped dill
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • Olive oil spray

Instructions

  1. Prep the salmon. It is important to make sure the skin is cut off of the salmon. See notes below on how to do this yourself or you can ask for it to be removed when you buy it. Then, cut the salmon into chunks and place it into the food processor and pulse it a few times to break it down into smaller pieces that look a little larger than ground meat.
  2. Make the patty mixture. Add the salmon to a large bowl with the rest of the salmon patty ingredients and combine them all together into a thick but slightly wet mixture.
  3. Form the patties. Use a 1/2 cup measuring cup to form the mixture into 4 even size round patties and place them onto a clean plate. To do this, fill a 1/2 cup measuring cup with some of the patty mixture then drop it into your hands and form it into a 1/2-3/4 inch thick round patty. Continue until you have formed 4 even size patties.
  4. Cook. Preheat the air fryer to 390 degrees F. Spray the air fryer basket with olive oil spray and carefully place the salmon patties into the air fryer far enough apart so they are not touching. Then spray each patty with more olive oil spray. Close the air fryer basket and cook at 390 degrees F for 8 minutes, flipping them over and spraying them with more olive oil spray halfway through the cooking time.
  5. Make the Fennel Slaw
  6. Serve. Layer some of the Cole slaw onto a plate and place one of the salmon patties on top of the coleslaw. Top the salmon with a little plain Greek yogurt, squeeze of lemon, some chopped dill and a sprinkle of kosher salt. Yum!

Notes

  • If you are using fresh salmon then make sure it doesn’t have the skin on it. You can either ask the Fish Monger at the fish counter at your grocery store to remove it for you or you can do it yourself. To cut the skin off of salmon yourself, simply lay the salmon on a flat surface skin side up and while pulling the skin towards you, use a sharp knife to slice the skin away from the flesh of the fish while you are pulling the skin. This took me all of 3 minutes to do.
  • To use canned salmon in this recipe you want to buy a good quality wild caught canned salmon. You will need about 3 (6 ounce)  cans of salmon. Then you will need to open the can, drain the liquid from it, remove any visible bones and then mash it up in a bowl with a fork. No need to pulse it in the food processor. Mix with the rest of the ingredients, form into patties and cook at 390 degrees F in the air fryer for 6-7 minutes. 
  • For easier clean up you can use an air fryer liner. I really like the parchment paper ones.
  • To store these salmon patties, let them cool completely after cooking, then place them into an airtight container and keep them in the refrigerator for up to 3 days. Reheat in a pan on the stove or in the air fryer at 360 degrees F for 3-4 minutes.
