Description

This incredibly easy hummus recipe is so quick to make.  It comes together in 5 minutes and is made in the blender. This homemade hummus is much healthier than store-bought hummus and it is packed with so much flavor. Made with chickpeas, garlic, tahini, lemon, olive oil, salt and pepper all blended until perfectly creamy and delicious. Vegan, gluten free, dairy free!


Ingredients

  • 34 tablespoons creamy tahini paste
  • The juice of 3 lemons – about 3-4 tablespoons
  • 2 (15 oz) cans of chickpeas drained and rinsed- I used low-sodium organic chickpeas
  • 2 cloves of garlic – chopped
  • 4 tablespoons extra virgin olive oil – plus more for topping
  • 23 tablespoons of water
  • Kosher salt and black pepper

Instructions

  1.  Add the tahini, lemon, chickpeas, garlic, olive oil, salt and pepper and 1 tablespoon of water to a high-speed blender or food processor.
  2. Cover and pulse on high until smooth and creamy, about 60 seconds.  Add more water 1 tablespoon at a time to get it nice and smooth if needed. 
  3. Transfer to a serving bowl and top with a drizzle of olive oil, more chickpeas and a sprinkle of paprika and parsley.  
  4. Serve with fresh cut veggies like carrots, cucumber and celery and some crunchy pita chips. 

Notes

  • Use low sodium chickpeas that are drained and rinsed so you can control the salt in this recipe. 
  • You can store this hummus in an airtight container in the refrigerator for up to 5 days.
